From barrels to the bottle


The "Très vieilles Réserves Familiales"  are the fruits of care and minute attention to detail, a work of patience and passion. When they have married the great delicacy and lasting flavours and are judged 'ready to sell', the COGNAC is drawn from the barrels without further filtration or treatment. Our Cognacs are drawn directly in two stages to ensure that any impurities, such as small fragments of wood from inside the barrel, have settled out. The COGNAC settles in 'dames-jeannes' for several months before bottling. Our cellars do not need industrial intervention in this process, time must be allowed to accomplish her work. All that remains to be done is to 'dress' the bottles according to their quality.
